This past Thursday my business partner, Harry Goodfriend, and I took part in a great outdoor seminar on composting. The weather was great and we learned alot. We were most interested in the Class Two sites that accept food waste because our products, compostable tableware and food service items would ideally be mixed in with food waste. Two things we learned about food waste--
It is 92% water so there is not alot of material left at the end of the process.
The composters that accept food waste are very concerned about generating odors that would affect adjacent and adjoining property owners.
Because of these two issues composters add alot of conventional compost material (yard waste) to the food waste as soon as it is delivered to them. If food waste was delivered mixed with other compostables the amount of yard waste needed for mitigation could be reduced.
